Lionel Mason also known as Charles Grand is a chef born and raised in the Bronx, NY. While spending most of his early summers traveling the Caribbean, Charles gained kitchen experience while staying with family and visiting different islands. Learning to cook with vegetation provided by the land, Charles has adopted a style of cooking which incorporates fresh herbs and seasonal ingredients.
Charles explains that you have to find methods to allow yourself to mentally shut down and focus intensely on your craft. Charles finds these moments through creative escapes.
When asked about his take on food and if it is still considered art, Charles simply replies...
"Fuck that! Food is the most versatile form of art and I’m bringing that back. Culinary ARTS. It engages all 5 senses. Smell, visuals, touch, taste, and you can definitely hear this steak get pan fried. The plate is my canvas."
